The extra hours of sunshine, sweet smelling blooms, and colors that come with springtime are such an encouragement after winter! This time of year is so energizing and full of life. What a perfect time to celebrate our Savior who sacrificed that we might have life in Him. The most exciting part about it is that He rose from the grave and we as His children can look forward to eternity with Jesus, the Giver of Life!
I had a sweet time with friends earlier this month over a springy brunch. :) I was so ready to use some bright and cheery colors in our apartment!
On the Menu
Chicken Salad Sandwiches: This recipe from Pioneer Woman is amazing! Seriously delicious, and there's room to adapt it to your taste buds.
Orange Tomato Salad: This salad is so simple, light, and refreshing. Perfect "girl" food. ;)
3 Roma Tomatoes
1 Large Orange
1 slice of Red Onion, chopped into smaller pieces
1 Tbls chopped Basil
1 Tbls Olive Oil
1-2 Tsp Red Wine Vinegar
1 Garlic Clove, crushed
Salt and Pepper to taste. Chop your vegetables and mix everything together. *I sliced my orange then peeled off the peel. Much easier than peeling first.
Coconut Macaroons: Easy to make and easy to eat...a lot of them!
1 1/2 Cup Coconut
1/3 Cup Sugar
2 Tbls Flour
1/8 Tsp Salt
2 Egg Whites
1/2 Tsp Vanilla
Combine coconut, sugar, flour, and salt. Stir in egg whites and vanilla. Bake at 325 for 18-20 minutes. Makes 1 1/2 dozen.
Citrus Water: Instead of just lemons, I added limes and oranges to our water as well. Apparently, limes don't float. :)
I love eating healthy meals that make you feel full but great afterwards! I hope you have a wonderful Easter tomorrow. :)
